Ham, Mushroom & Spinach Frittata – A Savory Keto Start! 🍳🍄🥬

Ingredients
- 1/2 tsp olive oil
- 40g chestnut mushrooms, sliced
- 25g ham, diced
- 40g spinach
- 2 medium eggs, beaten
- 1/2 tbsp grated cheddar
- salt and pepper to taste
Instructions
- Heat grill to high. In a small ovenproof frying pan, heat olive oil over medium-high heat. Cook mushrooms for 2 minutes until softened.
- Stir in the diced ham and spinach. Cook for 1 minute until spinach wilts. Season with salt and black pepper.
- Lower the heat, pour the beaten eggs into the pan and cook for 3 minutes until mostly set.
- Sprinkle cheddar on top and place under the grill for 2 minutes until golden and cooked through. Serve warm or chilled.
