Ham, Mushroom & Spinach Frittata – A Savory Keto Start! 🍳🍄🥬

Ingredients

  • 1/2 tsp olive oil
  • 40g chestnut mushrooms, sliced
  • 25g ham, diced
  • 40g spinach
  • 2 medium eggs, beaten
  • 1/2 tbsp grated cheddar
  • salt and pepper to taste

Instructions

  1. Heat grill to high. In a small ovenproof frying pan, heat olive oil over medium-high heat. Cook mushrooms for 2 minutes until softened.
  2. Stir in the diced ham and spinach. Cook for 1 minute until spinach wilts. Season with salt and black pepper.
  3. Lower the heat, pour the beaten eggs into the pan and cook for 3 minutes until mostly set.
  4. Sprinkle cheddar on top and place under the grill for 2 minutes until golden and cooked through. Serve warm or chilled.
