Masala Frittata with Avocado Salsa – Spicy, Creamy, and So Satisfying! 🍳🥑🔥

Ingredients

  • 1/2 tbsp olive oil
  • 3/4 onion, 1/2 thinly sliced, 1/4 finely chopped
  • 1/4 tbsp Madras curry paste
  • 125g cherry tomatoes, halved
  • 1/4 red chilli, deseeded and finely chopped
  • small handful fresh coriander, chopped
  • 2 large eggs, beaten
  • 1/4 avocado, peeled and cubed
  • juice of 1/4 lemon

Instructions

  1. Heat the oil in a small ovenproof pan. Cook the sliced onion for 10 minutes until soft and golden. Add Madras paste, fry for 1 minute, then add half the tomatoes and half the chilli. Cook until thick and tomatoes have burst.
  2. Preheat grill to high. Mix half the coriander into the beaten eggs, season, then pour over onion mix. Stir gently, cook over low heat for 8–10 minutes, then grill for 3–5 minutes until set.
  3. Mix avocado, remaining chilli, tomatoes, chopped onion, remaining coriander, and lemon juice to make the salsa. Season and serve with the frittata.
