Green Eggs – A Fresh, Nutritious Boost to Your Morning! πŸ₯¬πŸ³πŸ’š

Prep Time: 5 minutes Β· Cooking Time: 15 minutes Β· Servings: 1

Ingredients

  • 3/4 tbsp olive oil, plus extra for frying
  • 1 trimmed leek, sliced
  • 1 garlic clove, sliced
  • 1/4 tsp coriander seeds
  • 1/4 tsp fennel seeds
  • pinch of chilli flakes, plus extra to serve
  • 100g spinach
  • 1 large egg
  • 1 tbsp Greek yogurt
  • squeeze of lemon juice

Instructions

  1. Heat the olive oil in a pan and cook the leek with a pinch of salt until soft. Add garlic, coriander, fennel and chilli flakes. Stir until seeds begin to crackle.
  2. Add spinach, lower the heat, and cook until wilted. Move mixture to one side. Add a bit of oil and fry the egg as you like.
  3. Mix the yogurt into the spinach and season. Serve on a plate topped with the fried egg, a squeeze of lemon, black pepper and extra chilli flakes.
