Green Eggs – A Fresh, Nutritious Boost to Your Morning! π₯¬π³π

Ingredients
- 3/4 tbsp olive oil, plus extra for frying
- 1 trimmed leek, sliced
- 1 garlic clove, sliced
- 1/4 tsp coriander seeds
- 1/4 tsp fennel seeds
- pinch of chilli flakes, plus extra to serve
- 100g spinach
- 1 large egg
- 1 tbsp Greek yogurt
- squeeze of lemon juice
Instructions
- Heat the olive oil in a pan and cook the leek with a pinch of salt until soft. Add garlic, coriander, fennel and chilli flakes. Stir until seeds begin to crackle.
- Add spinach, lower the heat, and cook until wilted. Move mixture to one side. Add a bit of oil and fry the egg as you like.
- Mix the yogurt into the spinach and season. Serve on a plate topped with the fried egg, a squeeze of lemon, black pepper and extra chilli flakes.
