Ingredients

  • 2 large eggs
  • 2 tbsp shredded cheddar cheese
  • 2 tbsp chopped spinach
  • 1 tbsp diced bell pepper
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 180°C (350°F) and grease a muffin tin.
  2. In a bowl, beat the eggs and season with salt and pepper.
  3. Mix in cheese, spinach, and bell pepper.
  4. Pour mixture into muffin cups and bake for 18–20 minutes.
  5. Let cool slightly before serving or storing.
