Ingredients

  • 1/2 ripe avocado, sliced
  • 1 tbsp butter or coconut oil
  • Salt & pepper
  • Fresh herbs (optional)

Instructions

  1. Crack the eggs into a bowl, season with salt and pepper, then beat lightly.
  2. Heat butter in a non-stick pan over medium heat.
  3. Pour in the eggs and cook until just set.
  4. Add avocado slices on one half, sprinkle herbs if using.
  5. Fold the omelette and cook 1 more minute. Serve warm.
