Ingredients

  • 1 large eggplant, sliced into 1/4-inch thick rounds

  • 1/2 cup almond flour

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 egg, beaten

  • 1/2 cup sugar-free marinara sauce

  • 1 cup shredded mozzarella cheese

  • Fresh basil for garnish (optional)

Directions

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a shallow bowl, combine almond flour, Parmesan cheese, garlic powder, oregano, salt, and pepper. In another bowl, beat the egg.
  • Dip each eggplant slice into the beaten egg, then coat it with the almond flour mixture. Place the breaded slices on the prepared baking sheet.
